{vegan} Garlicky Ginger Fried Rice – peace. love. quinoa

It seems that I always have leftover cooked rice and/or quinoa in my refrigerator. I tend to make to always make extra quinoa & rice when I do make them because they can sit in the refrigerator for an extended period without going bad. AND it saves me time when preparing my next meals.
I recently used leftover quinoa atop a salad and I used leftover brown rice to make this fried rice. I like that this friend rice requires minimal ingredients, is quick and easy to make, and is filling
{vegan} Garlicky Ginger Fried Rice

Ingredients
- 2 cups cooked brown jasmine rice, leftover rice works well
- 1 cup peas
- 1 cut carrots, chopped or grated
- 1 cup green onions, chopped
- 2 tablespoons garlic, minced
- 2 tablespoons ginger, minced
- 3 teaspoons sesame oil
- pinch of salt
- 2 tablespoons Braggs Liquid Aminos (this is a soy sauce substitute)
Instructions
- In a large skillet, heat the sesame seed over medium heat then add the garlic and ginger, stir occasionally while cooking until fragrant and slightly browned (about 2-3 minutes).
- Add rice, peas, and carrots and stir-fry until heated and the rice begins to brown.
- Season to taste with Braggs Liquid Aminos.
