During conversation with a few friends lately, I’ve discovered a common challenge for people in general is coming up “with what’s for dinner”. I share that challenge as well, especially as a single person cooking just for myself. I tend to only make 2-3 meals a week and I make sure I have enough for leftovers. Below, you will find 25 vegetarian/vegan recipes, most of which are fairly easy to make.
