Ooey Gooey Brownies {vegan}

One of the best things EVER happened to me this week:
a Vegetarian Potluck during a Yoga Retreat
Valentines Day is around the corner, which inspired me to make & take a sweet treat.
I searched Pinterest and found this amazing recipe.
These brownies are the BEST I’ve ever had.
They’ll be the best you’ve ever had. (trust me)
I’m in looove.
Ooey Gooey Brownies
this recipe was adapted from the Emeril’s Gluten-Free Vegan Brownie recipe on Just A Smidgen
What you need:
- Earth Balance Butter substitute
- 1 1/4 cups applesauce (you can make your own)
- 1 cup cocoa powder
- 1 mashed banana
- 1 1/3 cup whole wheat flour (you can use brown rice flour to make this recipe GF)
- 2 cups vegan chocolate chips
- 2 cups sugar
- 1/4 tsp salt
- 2 tsp vanilla extract
What you do:
- Preheat oven to 350 degrees.
- Grease a 13x9x2 inch pan with the Earth Balance.
- In a large bowl, combine all of the remaining ingredients and stir. Then pour the mixture into the greased pan.
- Bake for 35-40 minutes or until a toothpick inserted comes out clean. Be sure to insert the toothpick in a few different areas. The chocolate chips may prevent you from getting a good read on whether or not the brownies are done.

You could use cooking spray as well.
We do clean eating here so I will most likely be reaching fr the coconut oil
