fresh corn & tomato salad

yesterday marked the day when I commited to eating more raw foods and less crap.
every Tuesday, Thursday, & Sunday of every week I will strictly eat raw fruits, veggies, nuts, seeds, grains, herbs, beans, legumes, and oils

 below is displayed a corn salad I quick whipped together last night. it is made with all raw ingredients and is quick & easy to make. this treat is also perfect for parties, gatherings, movies in the park, a camping trip, or picnics.

Fresh Corn & Tomato Salad

serves 2

What you need:

  • 2-3 ears of corn
  • 2-3 medium sized tomatoes
  • handful of chives
  • 5 large basil leaves
  • raw apple cider vinegar
  • olive oil
  • raw honey
  • sea salt
  • pepper

What you do:

  1. Cut the corn off of the cob with a sharp knife.
  2. Chop the tomatoes, basil, and chives.
  3. In a large bowl, combine the corn, tomatoes, basil, and chives. Add a dash of red wine vinegar and a drizzle of olive oil, then stir in a small dollop of raw honey. Sprinkle with a pinch of sea salt and pepper.
  4. Toss & serve.
